Tex Mex Rice Casserole

Ingredients:

5 cups rice, cooked
2 cups plain yogurt
1 cup cottage cheese
1 cup cheddar cheese, grated
2 4-oz cans green chillies, chopped or diced
1 onion, chopped

Directions:

Spray skillet with no-stick cooking spray and saute onion for five minutes. Add remaining ingredients. Transfer to 2-qt casserole and freeze.

On cooking day: Remove from freezer for defrosting. Preheat oven to 350F and bake 30-40 minutes or until cooked throughout.

Super Simple Chicken and Rice

Ingredients

4-6 boneless skinless chicken breast halves
Seasoning salt
Black pepper
1 cup rice
1 (1 oz) package onion soup mix

Directions

Preheat oven to 350 degrees F. Place rice in sprayed 9x13 baking dish. Sprinkle chicken with seasoning salt and pepper; place chicken on top of rice. Mix 1 1/2 cups water with onion soup mix and pour over chicken. Cover and bake for 1 hour 30 minutes.

Cuban Fried Rice

Ingredients
  • 1 fresh pineapple, peeled, packed in juice
  • 1 Tbsp. olive oil
  • 1 14.8-oz. pouch cooked long grain rice
  • 12 oz. cooked ham, coarsely chopped
  • 1 cup chopped or sliced sweet peppers
  • 1 jalapeƱo pepper, sliced
  • 1/2 15-oz. can black beans, rinsed and drained (3/4 cup)
  • Lime Wedges
Directions

1. Remove pineapple from container, reserving juice. Cut pineapple in 3/4-inch slices; discard core if present. Heat oil in 12-inch skillet over medium-high heat; add pineapple slices. Cook 3 to 4 minutes or until beginning to brown. Divide pineapple among four plates.

2. Meanwhile, prepare rice according to package directions. Add ham and peppers to skillet; cook 3 minutes, stirring occasionally. Add beans and rice. Cook, stirring occasionally, 3 minutes or until heated through. Stir in reserved pineapple juice. Serve with lime wedges. Makes 4 servings.

Chicken Alfredo and Rice Casserole

Ingredients
  • 1 10-oz. container refrigerated light Alfredo pasta sauce
  • 1/2 cup milk
  • 2-1/2 cups cooked white rice or wild rice
  • 2 cups cubed cooked chicken
  • 1 cup frozen peas
  • 1/3 cup chopped bottled roasted red sweet peppers
  • 1/4 cup slivered almonds, toasted (optional)
  • 1 Tbsp. snipped fresh basil or 1/2 tsp. dried basil, crushed
  • 1 cup soft bread crumbs
  • 1 Tbsp. butter, melted
Directions

1. Preheat oven to 350 degrees F. In large bowl combine pasta sauce and milk. Stir in rice, chicken, peas, sweet peppers, nuts, and basil. Transfer to 1-1/2-quart baking dish.

2. Bake, covered, 30 minutes. Uncover and stir. Combine bread crumbs and melted butter; sprinkle atop. Bake, uncovered, 20 to 25 minutes more or until heated through and crumbs are golden brown. Let stand 5 minutes before serving. Serves 4.

Chicken with Black Beans and Rice

Ingredients
  • 1/4 cup all-purpose flour
  • 1-1/2 teaspoons chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2-1/2 to 3 pounds meaty chicken pieces (breast halves, thighs, and drumsticks)
  • 2 tablespoons cooking oil
  • 1 15-ounce can black beans, rinsed and drained
  • 1 14.5-ounce can diced tomatoes with onion and green pepper, undrained
  • 1 cup tomato juice
  • 1 cup frozen whole kernel corn
  • 2/3 cup long grain rice
  • 1/8 to 1/4 teaspoon cayenne pepper
  • 2 cloves garlic, minced
Directions

1. In a large resealable plastic bag combine flour, 1 teaspoon of the chili powder, the salt, and pepper. Add chicken pieces, half at a time. Seal bag; shake to coat.

2. In a very large skillet brown chicken on all sides in hot oil over medium heat about 10 mintues, turning occasionally. Remove chicken from skillet and set aside; discard drippings. Add beans, undrained tomatoes, tomato juice, corn, uncooked rice, the remaining 1/2 teaspoon chili powder, the cayenne pepper, and garlic to the skillet. Bring to boiling. Transfer rice mixture to a 13x9x2-inch baking dish or 3-quart rectangular casserole. Arrange chicken pieces on top of rice mixture.

3. Bake, covered, in a 375 degrees F oven for 45 to 50 minutes or until chicken is no longer pink (170 degrees F for breasts; 180 degrees F for thighs and drumsticks) and rice is tender. Makes 6 servings.

Pork and Green Chiles Casserole

Ingredients
  • 1-1/2 pounds boneless pork
  • 1 tablespoon cooking oil
  • 1 15-ounce can black beans, rinsed and drained
  • 1 14-1/2-ounce can diced tomatoes
  • 1 10-3/4-ounce can condensed cream of chicken soup
  • 2 4-1/2-ounce cans chopped green chili peppers
  • 1 cup quick-cooking brown rice
  • 1/4 cup water
  • 2 to 3 tablespoons salsa
  • 1/2 cup shredded cheddar cheese (2 ounces)
Directions

1. Trim fat from pork. Cut pork into 1/2-inch cubes. In a large skillet, brown pork, half at a time, in hot oil. Drain off fat. Return pork to the skillet.

2. Stir in black beans, tomatoes, condensed soup, chili peppers, brown rice, water, and salsa. Bring mixture to boiling. Carefully pour into a 2-quart square baking dish. Bake, uncovered, in a 350 degree F oven for 30 minutes. Sprinkle with cheese; let stand for 10 minutes before serving. Makes 8 servings.

Artichoke Turkey Casserole

Ingredients
  • 1/2 cup chopped carrot (1 medium)
  • 1/2 cup chopped red sweet pepper (1 small)
  • 1/4 cup sliced green onion (2)
  • 1 tablespoon butter or margarine
  • 1 10.75-ounce can condensed cream of chicken soup
  • 1 8- to 9-ounce package frozen artichoke hearts, thawed and cut up
  • 1-1/2 cups chopped cooked turkey or chicken (see tip)
  • 1 cup cooked long grain rice or wild rice
  • 1/2 cup shredded mozzarella cheese (2 ounces)
  • 2/3 cup milk
  • 1/2 teaspoon dried thyme, crushed
  • 2 slices bacon, crisp-cooked, drained, and crumbled
  • 3 tablespoons grated Parmesan cheese
Directions

1. In a large skillet cook carrot, sweet pepper, and green onion in hot butter over medium heat until carrot is crisp-tender. Remove from heat. Stir in soup, artichoke hearts, turkey, rice, mozzarella cheese, milk, thyme, and bacon. Transfer turkey mixture to a 2-quart rectangular baking dish. Sprinkle with Parmesan cheese.

2. Bake, covered, in a 350° degree oven for 20 minutes. Uncover and bake about 20 minutes more or until bubbly. Let stand for 10 minutes before serving. Makes 6 servings.

3. Make-ahead directions:Prepare as above through step 1. Cover and chill for up to 24 hours. Bake, covered, in a 350° oven for 30 minutes. Uncover and bake about 20 minutes more or until bubbly.

Rice and Red Lentil Stew with Cauliflower and Peas

Ingredients

1 T vegetable oil
2 large leeks, rinsed and sliced
1 1/2 t. ground coriander
1 1/2 t. ground cumin
1 1/2 t. dry mustard
1 t. turmeric
1/4 t. cayenne
3/4 cup long-grain rice
1 1/2 t. salt
1/2 cup red lentils
1/2 med. head cauliflower, cut into 1" florets
1/2 cup fresh or frozen peas
2 T butter

Directions

In medium stew pot, heat oil over medium heat. Add leeks, coriander, cumin, mustard, turmeric, and cayenne, stirring constantly to toast the spices, for 1 minute.

Add rice, salt, and 4 1/4 cups water. Bring to a boil over high heat. Stir in lentils. Reduce heat to medium, cover, and cook until rice and lentils are just tender, about 20 minutes.

Add cauliflower, raise heat to high, and continue to cook, covered, stirring occasionally, for 5 minutes. Add peas and cook until they are warmed through and the stew has an oatmeal-like consistency, about 5 minutes longer. Add the butter, stirring until it melts. Serve hot in bowls. Serves 4-6.

Almond Beef Hawaiian

Ingredients:
1/2 teaspoon ginger
1 teaspoon sugar
1/3 cup soy sauce
1 tablespoon cornstarch
1/3 cup water
1 pound sirloin steak, cut in 1/4" strips across the grain
Onion powder to taste
Garlic powder to taste
1 cup celery, cut in 1/2" slices on the diagonal
1 cup onion, sliced
2 stalks fresh broccoli, cut into 1/2" long slices
1 cup Chinese pea pods
1/2 cup slivered almonds, toasted
2 cups cooked rice

Directions:

Season steak strips with onion and garlic powders to taste. Mix and set aside ginger, sugar and soy sauce. Mix cornstarch with water in another dish.

Blanch celery, onion and broccoli; set aside. If Chinese pea pods are frozen, thaw, but do not cook. Saute strips of steak, setting aside the slices as they finish browning on each side.

Combine soy sauce mixture with vegetables, almonds and steak slices, and heat - do not allow soy sauce to boil. Add water mixture. When hot, serve with cooked rice.

Reminder: Do not use any salt in this recipe.

Chicken and Wild Rice Chowder

Ingredients

  • 1 cup sliced carrots (2 medium)
  • 1 cup sliced celery (2 stalks)
  • 1 cup quartered mushrooms
  • 3 Tbsp. butter
  • 3 Tbsp. all-purpose flour
  • 2 14-oz. cans chicken broth
  • Chicken from Creamy Basil Chicken, chopped
  • 3/4 cup cooked wild rice
  • 1/4 tsp. ground black pepper
  • 1-1/2 cups half-and-half

Directions

1. In a saucepan cook carrots, celery, and mushrooms in hot butter over medium heat until tender. Stir in flour. Add broth, chicken, wild rice, and pepper. Cook and stir until mixture is bubbly and slightly thickened. Stir in half-and-half; heat through. Makes 4 servings.

Fast Chicken and Rice Recipe

Courtesy of Better Homes and Gardens. I recommend using brown rice for better nutrition. I'm going to try this one tonight and see how I like it!
  • 1 8.8-ounce package cooked brown or white rice
  • 1/2 cup frozen peas
  • 1 pound chicken breast tenders, halved crosswise
  • 1 tablespoon cooking oil
  • 1/4 cup bottled stir- fry sauce
  • Packaged oven-roasted sliced almonds

Directions

1. Stir peas into rice pouch. Heat in microwave according to package directions.

2. Meanwhile, in a large skillet, cook and stir chicken in hot oil over medium-high heat for 2 to 3 minutes or until no longer pink. Stir rice mixture into skillet. Stir in stir-fry sauce; heat through. Sprinkle each serving with almonds. Makes 4 servings.
