Freezer Ham Omelette

Ingredients:

6 eggs
salt and pepper
4 oz cooked ham, diced
1 tbsp chopped fresh herbs
1 tbsp olive oil


Directions:

Blend the eggs with salt and pepper, then add the ham and herbs. In fry pan, preheat oil then add egg mixture. Cook gently for 2-3 minutes, then broil for one minute.

Butter a piece of foil, then slide omelette on. Allow to cool, then wrap and freeze.

To serve, remove from freezer, place in buttered ovenproof dish, cover lightly with foil and reheat in a preheated 350 degree oven for 25-30 minutes.

Easy Oatmeal Muffins

Ingredients

1 cup milk
1 cup quick cooking oats
1 egg
1/4 cup vegetable oil
1 cup all-purpose flour
1/4 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt

Directions

1. Preheat oven to 425 degrees. Grease muffin cups or line with paper muffin liners.

2. In a small bowl, combine milk and oats; let soak for 15 minutes.

3. In a separate bowl, beat together egg and oil; stir in oatmeal mixture. In a third bowl, sift together flour, sugar, baking powder and salt. Stir flour mixture into wet ingredients, just until combined. Spoon batter into prepared muffin cups.

4. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.

You can substitute applesauce for the oil and honey for the sugar to make it healthier.

Spinach Cheddar Frittata

Ingredients

3/4cup egg substitute (i.e. egg beaters) or 3 egg whites, whisked
1ounce low-fat shredded cheddar cheese
1cup raw baby spinach, washed

Nonstick cooking spray

Salt and pepper to taste

Directions

Preheat the oven to 350 degrees. Whisk together the egg, cheese, and spinach; add salt and pepper to taste. Spray a small casserole dish with nonstick cooking spray, and pour in the egg mixture.

Bake for 15 minutes or until firm. Serve with fruit and whole grain toast.

German Pancakes

Ingredients

6 eggs
1 cup milk
1 cup flour
1/2 tsp salt

Directions

Blend in blender. Preheat oven to 375 degrees. Spray glass cake pan with cooking spray. Cut 1/2 cube butter into small pieces and put in cake pan while oven is preheating. When butter is melted, pour batter into pan. Bake for 40 minutes or more until golden brown. Will rise substantially.

Voila, you haf zee German Pancakes!

Serve with powdered sugar and lemon or limes. Enjoy

Shandee's Famous Overnight Bubble Bread

Caveat: OK, so this isn't exactly healthy, per se. If you'd like to make it healthier, try whole wheat rolls and sugar free pudding mix. Or, just save this for a special occasion, like Christmas morning -- when calories don't count!

Ingredients

1/2 cup pecan halves (optional)
18 frozen dinner rolls
1 (3.5 oz) package cook and serve butterscotch pudding mix
1/2 cup butter
1/2 cup brown sugar

Directions

1. Generously butter a 9x13 inch baking pan. Sprinkle pecans in bottom of pan (optional). Place frozen dinner rolls in a single layer on top of pecans. Sprinkle dry pudding mix over the top. (Yeah, that's right - totally dry!)

2. Combine butter and brown sugar in a small saucepan. Heat until boiling, then pour over rolls. Cover with plastic wrap or wax paper and allow to stand overnight.

3. In the morning, preheat oven to 350 degrees F (175 degrees C).

4. Bake for 20 to 30 minutes, until golden brown.

If you don't want to use frozen rolls, you can make your own bread. Follow the recipe as directed, but let rise in a slightly warm oven for about 30 minutes and then bake.
